Angkak known as fermentation product by Monascus purpureus that can be used as food colorant and has a valuable component known as lovastatin. Lovastatin, a secondary metabolite of Monascus species is one of the competitive inhibitors of hydroxymethylglutaryl-coenzyme A reductase, that has been widely used as a potent drug for lowering blood cholesterol.
